Chicken with bacon and chives (blanketed chicken recipe from 1896)
In this video, I demonstrate the recipe for blanketed chicken, a simple roast chicken seasoned with bacon and chives then served with a silky savory sauce poured over. Place in a dripping pan and sprinkle with salt, pepper, and finely cut chives. Cover with thin strips of bacon and bake in a hot oven until chicken is tender. Remove to a serving dish and pour around the following sauce: To three tablespoons of fat taken from dripping pan, add four tablespoons of flour and 1 1/2 cups thin cream, or half chicken stock and half cream may be used. Season with salt and pepper.
